don’t “beet” yourself up about it

Beets, like brussel sprouts, are an unloved vegetable. It doesn’t have to be that way!

1. Wash the beets

2. Wrap them individually, loosely in tin foil

3. Roast at 350 for 60 minutes

4. Remove from oven, and set aside to cool

5. Slice off one end, and push the skin off.

That’s it! Here’s what I did with them:

    I love roasted beets! (And brussels sprouts too for that matter.)

    I agree, both brussel sprouts and beets are underappreciated (Actually, aren’t most vegetables underappreciated?) It’s because often times they aren’t cooked right. I love roasted beets!

      Haha, yes, most vegetables are under appreciated! I think the poor beets and brussels sprouts get the worst of it though!
