sunday dinner with our[Boston]nest
The slow cooker Sunday dinner is becoming a trend in our[Boston]nest! I love being able to throw everrything in on Sunday morning, and then not think about it again until dinner time. The next step is to get up early enough to put this to use on a week day!
I took a break from my trusty cookbook collection and did some googling for this recipe. I found it online here, and it came out absolutely fantastic. I cut the recipe in half, and we still got two dinners plus enough for leftovers tomorrow.
Normally I would have pictures for you, but we ate the whole thing so fast there wasn’t time to get the camera!
Here’s my version of the recipe, with everything halved*:
1 onion chopped
4 cloves garlic, diced
2 apples peeled and chopped
1/2 tsp salt
1 tbsp curry powder
1 8 oz jar mango chutney
1 1/2 lbs boneless, skinless chicken breast
Combine all ingredients in the slow cooker, stir, and let cook on high for 5 hours. Serve over jasmine rice.
*if you look at the original recipe, you’ll see I used the full amount of some ingredients for taste – adjust as needed.
