tender slow cooker lovin’

Jason and I have fallen in love.

With our slow cooker.

You might have seen last week’s BBQ chicken recipe. It was fantastic! Here’s another one that we tested out this weekend. We found it at BHG.com, and this is the first recipe in awhile that we haven’t modified beyond recognition – it’s perfect the way it is!

2 bone-in skinless chicken breasts
1 1/2 tsps thyme
6 garlic cloves, diced
1/2 c. Orange juice
3 tbsps balsamic vinegar

Combine all ingredients in the slow cooker, and cook on low for seven hours. Serve over mixed greens with kalamata olives and feta cheese.

YUM! I cooked an extra breast, and made the leftovers into a fantastic salad for lunch at work. You’ve got to love good leftovers!

    That looks amazing! I love that you serve it over/with salad, as so many slow cooker recipes are so heavy. I will def. be trying this!
