chicken salad [grown-up edition]

You commute to a “grown-up” job everyday, isn’t it time your chicken salad reaches your level?

The simple twist on an old favorite couldn’t be easier. Mix up your chicken salad as you usually do. Then add a handful of craisins, and a heaping teaspoon of poultry seasoning ( I prefer McCormick and Schmicks). Add more if you’d like! Poultry seasoning is a blend of herbs that is often used when roasting a bird. The combination of flavors is reminiscent of Thanksgiving – perfect for this time of year.

My chicken salad is in a pita for tomorrow, but if you want to get really fancy about it, pack the chicken salad and bread slices separately. When you’re ready to eat, toast the bread in the toaster at your office, then top with lettuce and chicken salad. Enjoy!!
